Among the morning’s correspondence was a note from a traveling lady who says she grew more eggplant than she could possibly deal with this year.
She loves Venice, and maybe they eat eggplant there, but why else would anyone grow it? Or worse, eat it? I mean the stuff has texture, sure, and the flavor of whatever else you toss in the pot, but that’s it. I grow it to sell, but mostly because I love the beauty of its fruits and magical blossoms. So what sort of idiot organic farmer would grow for those reasons?

Beautiful color; try roasting it in oven for 20 min or so, remove, scrape out pulp and add some additional tastes to your liking. spread on crackers pretty delicious and different!
